Classic Caesar Salad
1 large head romaine lettuce
3/4 c. olive oil
1/4 c. red wine vinegar
1 tsp. Worcestershire sauce
1/2 tsp. salt
1/4 tsp. dry mustard
1 large clove garlic, crushed
1 lemon, halved
Fresh cracked pepper
1/4 c. freshly grated Parmesan cheese
Wash romaine and add to Salad Spinner to remove excess water and dirt. Trim core, and separate stalks into leaves. Cut course ribs from larger leaves, and tear or chop into bite size piece and place in large bowl.
Combine olive oil, red wine vinegar, Worcestershire sauce, salt and dry mustard in jar or shaker. Cover tightly, and shake vigorously. Pour dressing over romaine and toss gently until coated.
Squeeze half lemon over salad and grind a generous amount of black pepper all over salad.
Sprinkle with Parmesan cheese and top with Garlic Croutons if desired Serve immediately.
For a punch of protein: Add 4 oz of either Roasted Chicken, Salmon, or Grilled Blackened Shrimp
