Healthy Garlic Shrimp
1 16 oz. Bag Shrimp (raw)
2 Tbsp. Garlic, minced
2 Roma Tomatoes, cubed
1/2 Onion, diced
1 C. sliced mushrooms, fresh
2 C. Fresh Spinach
2 Tbsp. White Rice Vinegar
2 Tsp. Dried Basil
1/2 Tsp. Salt
1 Tsp. Pepper
1/4 Lemon, quartered
Crushed Red Pepper Flakes
1/2 C. White Rice or
8 oz. Cooked Angel Hair Pasta (leave 1/4 cup reserved cooked pasta water for sauce)
In large bowl, mix together the seasonings (Salt, Pepper, Garlic, Basil, Vinegar). Add the shrimp, tossing thoroughly to coat each piece.
Heat skillet, coated with Pam, to medium high heat. Add chopped onions and sliced mushrooms cooking until browned (4 minutes).
Next, add tomatoes and spinach, cooking until tender (2-3 minutes).
Lastly, add shrimp to skillet and continue to stir the shrimp until they turn from opaque white to a nice rich coral color.
Remove from heat and squeeze fresh lemon juice all over.
Top with Crushed Red Pepper Flakes for heat.
Serve either over angel hair pasta* or white rice
*use the 1/4 cup reserved pasta water to add to veggie/shrimp mix before adding pasta. The water will help the pasta to adhere to the ingredients.
