Mini Cheese Balls
Enjoy these variations of individual cheese balls. Sweet, savory, or spicy - you choose. You will win with these crowd-pleasing bites.
Strong suggestion that you use a higher quality cheese. These can be found in the deli section or fine cheese coolers in your local grocery store. I prefer using Cabot's. Start off by freezing the cheese, so that when you grate the block it will stay firm.
Ingredients:
4 oz Cabot's Sharp Cheddar Cheese
2 Scallions
8 oz Cream Cheese
1 tsp. Garlic Powder
1/2 tsp. Cayenne Pepper
1 tsp. Worcestershire Sauce
Salt & Pepper to taste
Coating Options:
Trader Joe's Everything Bagel Seasoning
Chopped Walnuts & Cranberries
Finely Chopped Parsley, Thyme and Rosemary
Crumbled Bacon & fresh minced Jalapeno's
Directions:
Grate the sharp cheddar cheese into large bowl. Add cream cheese and mix with spatula until fluffy.
Add chopped scallions, garlic powder, cayenne pepper, and Worcestershire sauce. Mix until all combined. Add S&P to taste.
Using the medium cookie scoop form the mixture into small balls.
Place different coatings into separate dishes. Roll cheese balls in coating and place on tray.
Serve with savory crackers.
Store in refrigerator, covered, for up to 3 days.
