Peppery Greens with Sweet Raspberry Vinaigrette

The raspberry taste really comes through in this slightly sweet dressing that covers these peppery greens. If you cannot find watercress, replace with arugula for that peppery note.


Ingredients:


3 c. Watercress leaves

1 1/2 c. Spinach or Arugula

1/4 c. shaved Parmesan Cheese

1/4 c. sugar free cran-raspberry juice

1/4 c. seedless raspberry jam*

3 tbsp. raspberry vinegar

2 tbsp. olive oil

Salt & Pepper


Dressing:

Combine juice, jam, vinegar, olive oil and salt and pepper in jar and shake vigorously.


Directions:


Wash salad greens and dry using the Salad Spinner. Pour dressing over leaves and lightly toss to coat. Add shaved Parmesan cheese. Serve immediately.
