Spicy Sausage, Sweet Potato & Kale Soup
Enjoy this Whole30 inspired soup. Sweet, spicy and hearty for a perfect meal.
1 lb. Hot Jimmy Dean Sausage
1 Medium Yellow Onion, diced
1 Large Sweet Potato, cubed 1/2 inch chunks
1 Tbsp. Better than Bullion Chicken paste
4 C. of Water
1 Tbsp. Italian seasoning
1/2 bunch Kale, stems removed and chopped
Salt & Pepper
Heat drizzle of olive oil in medium stock pot on medium high heat. Dice onion and add to stock pot. Cook until translucent.
Add spicy sausage to pot and brown 4-6 minutes. After sausage is cooked through, add diced sweet potato, Italian seasoning, and generous portion of salt and pepper, stir.
Whisk water and bullion paste together and pour into pot. Bring to boil and cover with lid and simmer 10 minutes.
Uncover, add kale and cook for another 5 minutes until kale and sweet potatoes have softened.
Serve with toasted bread and shredded Parmesan cheese.
